Stuffed Sweet Paprikas
Millions of people all over the world have been forced by the unprecedented times of the COVID-19 epidemic to slow down their pace in life for some time, by living under various lock down regulations. Like these millions of people staying at home, I too have had to look at ways to keep myself occupied and also happy. So, amongst the things I have been doing, is a lot of baking and cooking, after all we have to eat. My kitchen is my happy place. It has been loads of fun cooking and baking, then clicking photos and sharing recipes with family and friends over social media. These lock down days have seriously brought about the creative side in many individuals, which is pleasing to know. It has been exciting to attempt a few different but interesting and delicious meals with the limited ingredients available.
Whilst shopping for essential fresh produce, these beautiful, large, coloured sweet paprikas were purchased and brought home to cheer me up. That it did!
A few ingredients are required, again most of which you would have in your refrigerator. The sweetness of the paprika, the tangy flavour of the feta and the heat from the hot chilli leaves a flavourful taste.
The paprikas can be stuffed and placed in the refrigerator a few hours in advance before baking in the oven just before serving. Its super quick to prepare and delicious.
Stuffed Sweet Paprikas Recipe
Preparation and baking time: 30 minutesIngredients
6 Sweet Paprikas
150g Feta Cheese
1 and a half cups Baby Spinach
3 Hot Chillies
1 Tablespoon Oil

Method
1. Wash the paprikas and dry with a paper towel.
2. Using a knife slit the paprikas but create a slit only big enough to fill up the paprikas. Scoop out the seeds and set aside.
3. In a mixing bowl add the washed and chopped baby spinach, chopped chilli and feta.
Note: The feta cheese I have used contains black pepper and mixed herbs. Also remember that feta cheese has a tangy taste. I have therefore omitted the use of salt and pepper.
4. Combine all of the ingredients together lightly. The filling is now ready.
5. Take a few teaspoons of the filling and gently stuff the paprikas.
6. Place the stuffed paprikas in a casserole dish and brush lightly with oil.
