Banana and Muesli Cookies
It was a huge moment for friends of ours when their
Dwarf Lady Finger Banana Plant, which they had been growing in their backyard
for a while now, finally produced beautiful bananas. They very kindly gave us a whole hand of
these cute lady finger bananas.
Interesting to know, is that this type of banana plant grows quickly but bares fruit between 15 to 18 months. The bananas are deliciously sweet, have thin skin and grows to about 10cm in length.

Bananas are a favourite fruit in our home. When bananas
ripen too quickly, it’s a perfect opportunity for me to use them in a recipe
and whip up a treat.

Banana and Muesli Cookies. These Banana and Muesli Cookies are the perfect
breakfast cookies when you on the go and there is no time for a sit down
breakfast. You could also prepare them
as an anytime healthy snack. Kids love them too. Simple as 1, 2, 3…
I have used Muesli in my recipe as muesli contains
a mix of dried coconut, dried fruit and nuts. There are few varieties of muesli
available at stores or you could try your hand at making homemade muesli. I love
the crunchiness of the oats, roasted coconut and nuts, together with the chewy,
tangy dried fruit such as cranberries and dried apricots. Oats alone is just
soo good for heart health. The nuts provide you with protein and the fruit
content provide you with vitamins, fibre and potassium.
So here you have it … Muesli is no doubt a healthy
breakfast option and which can be eaten hot or cold. Hot with milk or cold with yogurt and berries.
Recipe for Banana and Muesli Cookies
Ingredients
2 to 3 whole bananas, peeled and mashed. (Due to the fact that I used lady
finger bananas which are quiet small around 7 to 10cm, I have used 8 bananas in
this recipe.)
1 teaspoon cinnamon powder
¼ teaspoon salt
6 Tablespoons melted butter or vegetable oil
2 cups of Muesli
Nb. As an alternative to using muesli, I would recommend the use 1 cup of ordinary oats such as Jungle Oats and to that add ½ cup of chopped mixed nuts and ½ cup of chopped dried fruit such as cranberries, dates, sultanas, dried apple or whatever dried fruit you fancy.
Method
1. Preheat the oven to 180 degrees Celsius.
2. Place the mashed bananas into a bowl. Add the
muesli, cinnamon powder, salt and melted butter or oil. Combine all these
ingredients.
3. Using a tablespoon, scoop out portions and shape into cookies and place onto a lined baking tray. Bake for 20 minutes.

Storage
1. Banana and Muesli
Cookies can be stored in an airtight cookie jar.
2. It can also be stored in the freezer, in an air tight freezer container or zip loc bag for about a month or two… only if you
can manage it lasting that long!
